La mostra de formatges catalans Lactium torna a la presencialitat després de la pandèmia

La 14a edició de la mostra de formatges catalans Lactium se celebrarà enguany el 14 i 15 de maig a Vic. El director de la fira, Isaac Gelabert, s’ha mostrat satisfet per poder recuperar l'”essència” d’abans de la pandèmia tant pel que fa al format com a l’aforament. Entre les novetats hi ha l’ampliació dels premis que s’atorguen. A les quinze medalles d’or per categoria s’hi afegiran en alguns casos medalles de plata i de bronze. Les deliberacions del jurat, a distància l’any passat, en aquesta ocasió tornen a la Casa Ricart. El millor producte rebrà el Premi Millor Formatge Català Lactium-Gastroteca. Un any més la mostra se situa al parc Jaume Balmes i acollirà unes 40 formatgeries catalanes i artesanes que oferiran més de 250 formatges.

Sense control d’aforaments, sense tanques al voltant del parc i sense mesures sanitàries especials. “Enguany el Lactium recupera la normalitat per seguir fent la tasca de promoure i prescriure la cultura del formatge artesà i català”. Així ho ha explicat aquest dimecres el seu director, Isaac Gelabert, qui també ha destacat el compromís per ajudar a augmentar la demanda d’aquest tipus de producte i que això reverteixi en un major consum i una major producció.

 

Entre les novetats d’aquesta edició també es recupera la figura de la formatgeria convidada. En aquesta ocasió es tracta de la formatgeria gallega Galmesán de Arzúa, que acostarà a Vic els seus formatges de vaca. Gelabert ha explicat que es tracta d’un formatge de pasta premsada cuita i de llarga maduració, elaborat amb llet de vaca de pastura i amb flora làctia obtinguda de la pròpia llet fresca. “És semblant a un parmesà, un formatge molt potent i molt apreciat”, ha dit el director de la mostra.

 

El nom dels formatges guardonats es farà públic dissabte 14 a les cinc de la tarda a l’escenari del Parc Jaume Balmes. Més enllà de l’espai comercial i expositiu que estarà obert tot el cap de setmana, el Lactium també oferirà propostes festives i divulgatives com l’Aula del Formatge, el TxisBar, xerrades o tastos. A més, es recuperen les actuacions de música en directe i un espectacle familiar.

Des de Promotora d’Exportacions Agroalimentàries (Prodeca) del Departament, Ramon Sentmartí ha posat en valor el Lactium com un vector que promou la “salut” del paisatge. “Si moltes de les explotacions no hi fossin, es notaria especialment”, ha destacat Sentmartí. Segons ha afirmat el representant de Prodeca en la presentació de la mostra formatgera, “fires d’aquest tipus ajuden a fixar gent i a donar viabilitat al territori”.

 

La comarca d’Osona reuneix el 20% de les explotacions de vaca lletera de Catalunya, i prop d’un 14% del volum de producció de llet de Catalunya. Des de fa anys, el sector arrossega un greuge pel preu que la distribució paga per la llet i que, darrerament, s’ha fet insostenible per a molts productors. En el marc del Lactium, i repetint l’experiència del Mercat del Ram, hi haurà un expositor de Vaquers Plana de Vic adreçat al públic infantil amb l’objectiu d’explicar a través d’un conte la reivindicació dels ramaders perquè se’ls pagui un preu just per la llet que produeixen.
