La Fira del Gall de Vilafranca torna amb novetats gastronòmiques però amb preocupació davant l’augment de preus

L’espai de venda estarà obert el dissabte a la tarda, en paral·lel a l’espai de gastronomia on sis restaurants vendran racions cuinades amb el gall penedesenc.

La 358a Fira del Gall de Vilafranca del Penedès se celebrarà el 17 i 18 de desembre amb previsió de recuperar el màxim esplendor de la cita, deixant enrere els condicionants de la covid. Els organitzadors, però, han hagut d’enfrontar-se enguany a “l’entrebanc” de l’augment de preus, segons han admès aquest dimarts durant la presentació de la fira. I és que les granges recorden que s’ha disparat el preu del gra amb què alimenten els galls. Pel que fa a la programació, destaca l’estrena de l’espai de tastos gastronòmics en col·laboració amb la DO Penedès. La nova carpa complementa la mostra de plats que ofereixen els restauradors i que aquest cop es podran recollir amb carmanyoles dutes de casa.

Els galls i plats que es vendran a la fira vilafranquina no han escapat de la inflació generalitzada. Els criadors han recordat que els cereals predominen en un 70% l’alimentació del Gall del Penedès amb segell IGP. “No hem pogut fer-hi més”, ha assegurat el criador Rafael Moliner, que ha recalcat que és impossible modificar l’alimentació dels galls “perquè cal complir uns requeriments i garantir la qualitat”.

L’increment de preus dels galls serà, de mitjana, de 2,5 euros el quilo. D’aquesta manera, el gall sencer es vendrà a 18 euros/kg i el gall tallat valdrà 16,5 euros/kg. Pel que fa a l’animal sencer sense desplomar, aquest costarà 48 euros cada peça. La previsió dels criadors de l’IGP Gall del Penedès és que al llarg de la fira es venguin 1.200 exemplars, comptant la venda als visitants i els que es distribueixen a través de la restauració.

En aquest sentit, els sis restaurants participants a la fira preveuen preparar 8.000 racions d’àpats cuinats amb el gall penedesenc. El xef Oriol Llavina ha admès que l’increment de preus genera un cert temor de cara a la venda, però ha augurat “que la gent respondrà a favor i comprendrà per què cal pagar algun euro de més”.

En el cas de la restauració, la pujada de preus serà d’una mitjana de 3,5 euros. Així, la ració de gall costarà 14 euros, la d’ànec mut en valdrà 12 i les de canelons i demés trinxats en costaran 7. “Si no apugéssim preus, hauríem de donar gat per llebre o bé reduir quantitats, i això no ens ho plantegem”, ha defensat Llavina.

La regidora de Promoció Turística, Dolors Rius, ha negat que es tracti d’un augment de preus i ha assegurat que és una “actualització per no escatimar en qualitat ni benestar del producte”. “Si perdem la qualitat i la identitat de la Fira del Gall, acabarem fent una altra fira que potser serà més rendible però serem morts com a Penedès”, ha afegit l’alcalde, Pere Regull.

Nou hectàrees de fira

Vilafranca focalitzarà tots els esforços un any més en una fira que aclapara bona part de la ciutat, amb un recinte que s’estén al llarg de nou hectàrees que uneixen el Parc de Sant Julià i el Pavelló Firal. Un dels principals reclams s’espera que sigui, novament, la mostra de gallines penedesenques. Durant tot el cap de setmana, els organitzadors anhelen arribar als 40.000 visitants assolits en les millors edicions.

Pel que fa al nou espai de tastos, aquest s’ubicarà al lateral del pavelló Firal i organitzarà sessions monogràfiques del Gall del Penedès per defensar la seva desestacionalització, però també maridatges de formatges i d’embotits, dirigits per la DO Penedès.

En relació als espais de venda, es podrà triar l’animal viu i recollir-lo hores després sacrificat, o bé comprar-lo tallat i preparat per ser cuinat a casa. Com es va fer l’any passat per primer cop, l’espai de venda estarà obert el dissabte a la tarda -i no només als matins-, en paral·lel a l’espai de gastronomia on sis restaurants vendran racions cuinades amb el gall penedesenc. Un altre dels espais clàssics serà el Wine Bar organitzat per la DO Penedès.

En paral·lel al vessant més gastronòmica, la Fira del Gall celebrarà enguany el 25è aniversari de la Mostra de Bestiari Festiu de Ploma. Als quatre personatges vilafranquins -el Gall Tomasot, la Gallina Ballarica, l’Àliga i l’Aligueta Tramuntana-, s’hi sumaran les bèsties de la Pobla de Montornès, de Palau-Solità i Plegamans, del Vendrell i del Barri Gòtic de Barcelona en una cercavila que es farà diumenge al migdia.
