Aposta per la cuina de proximitat dels cuiners del Pallars

El seminari ‘Cuinem talent’ impartit per cuiners del Pallars ha servit per reivindicar la feina d’aquests professionals. Tots ells aposten per productes de temporada i proximitat a l’hora de l’elaboració de les cartes dels seus restaurants. Dolors Echalar, tècnica del projecte ‘Al teu Gust’, ha explicat que darrere dels “excel·lents productes que s’elaboren” a les cuines dels restaurants pallaresos hi ha “excel·lents cuiners”. El seminari ha servit per teixir xarxa entre tots ells i sumar esforços. L’aposta per la formació al territori des de programa ‘Treball a les comarques’ ha estat “molt ben acollida” pel sector ja que la formació professional de qualitat a prop de casa és un dels aspectes que troben a faltar.

‘Cuinem talent’ és una iniciativa de l’Ajuntament de Sort i l’Ajuntament de Tremp. En aquesta primera edició, hi participen Josep Palau (Casa Masover de Buira), Marina Pàmpols (Restaurant Buenos Aires), Meritxell Tartera (Hotel Pessets) i Jaume Mora (Fonda Farré). Tots quatre dirigeixen les cuines dels seus establiments i defensen activament els productes de la terra.

 

Echalar ha explicat que el seminari vol “posar en valor el talent local” que hi ha a les cuines del Pallars i ha recordat que el producte està “molt ben valorat” però que cal reivindicar el paper dels professionals que “l’elaboren, el cuinen i el defensen” a les cartes dels seus restaurants.

 

Aquest seminari vol donar les eines necessàries per coneixement els productes de proximitat i la manera d’incorporar-los a la cuina. I aquests coneixements els han donat a conèixer els cuiners dels Pallars, els millors coneixedors dels productes que cuinen. Echalar ha defensat el seminari ‘Cuinem talent’ de quatre dies de durada per l’aposta que fa de portar la formació al territori i l’oportunitat de compartir coneixement entre els cuiners del Pallars Sobirà i Jussà.
