Amanida de figues amb formatge de cabra i pernil

Les figues són una bona font de potassi i fibra. Poden ajudar a reduir la pressió arterial de forma natural. Són de fàcil digestió i tenen un efecte laxant. És una fruita molt indicada en persones amb el colesterol elevat o amb problemes de restrenyiment. Es poden consumir fresques o deshidratades i posar en plats salats o dolços. Podeu fer-les una mica a la paella, però generalment es consumeixen crues en postres, esmorzars o en amanides.

Existeixen una gran varietat de figues, les de pell verda, violeta, negre, vermella… i totes elles es caracteritzen per ser fràgils i delicades.

Si les comprem al mercat, les hem de triar que siguin fermes i perfumades, i les hauríem de consumir com a màxim en 3 o 4 dies, per tal de guardar totes les seves propietats nutricionals i organolèptiques.

Amanida de figues amb formatge de cabra i pernil

Ingredients

  • 500 g de figues d’Alguaire
  • 200 g de formatge de cabra fresc
  • 150 g de pernil tallat fi
  • 1 grapat de fulles d’espinacs tendres
  • 1 grapadet d’ametlles o avellanes torrades i trinxades
  • fulles d’alfàbrega
  • 3 cullerades soperes d’oli d’oliva
  • 1 cullerada sopera de mel
  • 1 cullerada sopera de vinagre
  • sal i pebre

 

Elaboració

Escalfar 2 c/s d’oli en una paella, afegir les figues tallades per la meitat, el vinagre, la mel, sal i pebre. Remenar suaument durant 2 minuts i reservar.

Muntar l’amanida amb les fulles d’espinacs tendres, les figues, el formatge esmicolat i el pernil tallat fi.

Afegir l’alfàbrega picada, les ametlles o avellanes trinxades, oli, sal i pebre al gust.
