Bolets Peratxa impulsa i treballa per dur a terme el primer cultiu de gírgoles ecològiques de Catalunya

El primer cultiu de gírgoles ecològiques de Catalunya arribarà entre els mesos de gener i febrer de 2023 a Organyà (Alt Urgell). En aquesta localitat s’està impulsant un projecte que preveu assolir, en un primer moment, una producció d’uns 400 quilos d’aquest tipus de bolet al mes. Per fer-ho possible, s’estan construint quatre hivernacles en una finca a tocar del poble i la idea és que, un cop estiguin a ple rendiment, contractar una persona sorda signant. D’aquesta manera, es busca crear un entorn laboral inclusiu on el col·lectiu es pugui expressar en llengua de signes. Per tot plegat, demanen aportacions a particulars i empreses en el marc de la campanya de ‘matchfunding’ que s’està duent a terme a les comarques de l’Alt Pirineu i Aran.

La família materna de la Jordina Sánchez Amat és d’Organyà i ella, nascuda a Barcelona, buscava des de feia temps traslladar-s’hi a viure amb la parella i els seus dos fills. En els darrers deu anys ha estat vinculada a l’àmbit de coneixement de la llengua de signes, però també tenia inquietuds per “provar en el sector primari”. Ara, ha volgut unir-ho tot en el seu nou projecte, Bolets Peratxa, on cultivarà gírgoles ecològiques mitjançant palla, aigua i també miceli, ja que els seus filaments conformen el fong i d’aquests en surt el bolet, el seu òrgan reproductor. La idea és anar assumint cada cop “més parts del procés”, comenta.

 

La Jordina explica que li agraden molt els bolets i que, arran d’anar-se fixant en la procedència dels que consumien, va veure que hi ha una necessitat d’augmentar-ne la producció ecològica. De fet, indica que no en té constància que hi hagi cap altra empresa que cultivi gírgoles ecològiques a Catalunya. En aquest sentit, detalla que s’han decantat per aquest tipus de bolet per la seva “versatilitat” tant a la cuina com en el conreu i afegeix que la seva intenció és la d’anar experimentant amb diversos sistemes de cultiu, tant pel que fa a recipients com a reciclar altres matèries orgàniques.

Dels quatre hivernacles on es durà a terme la plantació, un d’ells estarà destinat al procés d’incubació –on el miceli colonitzarà tot el substrat-, ja que en aquesta fase es necessita una temperatura més elevada. A la resta, el que cal controlar és la humitat, que ha de situar-se al voltant d’un 90%. Pel que fa al cicle de cultiu, es calcula que s’allarga durant aproximadament un més, tot i que de cada inoculació en poden sortir dos o tres florides cada quinze o vint dies, segons explica la Jordina.

 

El projecte compta amb un pressupost d’uns 70.000 euros, 60.000 dels quals en infraestructures. Per finançar aquesta part, han rebut una subvenció dels fons Feader que els cobreix fins a un 60% del cost de les instal·lacions. La resta es vol cobrir amb l’ajuda de la campanya de ‘matchfunding’. Aquest sistema de finançament col·lectiu, que promou un retorn social per al territori, implica que les administracions públiques complementen, fins a 4.000 euros, l’import aconseguit mitjançant les aportacions de particulars i empreses.
